Recipe Swappin' Saturdays: Individual Chicken Pot Pies


The theme for this week was chicken, so I decided that I would make Individual Chicken Pot Pies.

Individual Chicken Pot Pies

Prep Time: 5 minutes
Cook Time: 30 minutes



Ingredients

  • 1 package of refrigerated pie dough
  • 2 cups of chopped chicken breast (I used 1/2 a rotisserie chicken)
  • 2 cups of frozen mixed vegetables , thawed
  • 1 (10-3/4 ounce) can of 98% fat-free cream of chicken soup , undiluted
  • 1/4 cup of skim milk
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • cooking spray
Directions

  1. Preheat oven to 450.
  2. Combine the chicken & the next five ingredients in a large microwave bowl.

  3. Microwave on HIGH for 2 minutes or until warm (stir 1/2 way through).
  4. Unroll dough, lightly roll in out, and then quarter the pie shell.
  5. Line a large muffin tin with 1/4 the dough, like in the image below. (I used my Demarle Texas Muffin Tray, which I love!)

  6. Fill the dough with the filling and pull the corners together and seal them.
  7. Lightly coat the top of the pot pies with the cooking spray.
  8. Bake at 450 for 15-18 minutes (or until the crust is golden brown).

Travel Tip: Booking the Lowest Airfare

When I plan a trip, I go to great lengths to make sure I am getting the cheapest airfare possible. My dad worked for the airlines, so I grew up flying free and so I hate paying for a ticket. Over the years I've made a few observations that help feel confident I'm getting the best fare out there. Here are 3 tips to help you get the best fare for your upcoming travels:

1. The lowest listed fares are usually on Tuesdays and Wednesdays.

2. Use Expedia, Orbitz and other travel sites to see available fares, but make sure to double check the airline site. Often I can save $5-10 on service fees, and they have more time options.

3. Figure out what you will be paying to check baggage, for the emergency exit row, etc. Many airlines have extra fees these days. I love Southwest because they don't have baggage fees . I recently booked a trip on a different airline because the fare listed was cheaper. After getting to the airport and paying over $100 (each way) for baggage fees, it would have been cheaper for me to fly Southwest.
