My poor neglected blog

It's been a while since I've posted...way to long. The project that I was working on at work back in November and December (the one that was supposed to be finished in December), well, I'm still working on it. Sigh. My vendor severely under bid the project and has lost a lot of money on it.

My family life has been just as busy. In late-January, we found out we were pregnant with Baby #2, another boy. We're due in mid-September. We are very excited, and can't wait for the arrival.

In late-March, we moved closer to where my husband works and goes to school. I really can't say that I recommend a move in the middle of your first trimester; especially if you have a very active toddler to keep up with! It seems that we spent all of February and March getting ready for the move, and then all of April and May getting our old house ready to rent.

I now commute 1 hour and 10 minutes to work, which stinks, but I don't have much longer to commute. July 30th is my last day, and I will be a SAHM. I am very excited to be home with my babies. I'm already checking out FREE things to do in the area.

Hopefully, I will have more time to give attention to this blog after I am home. In August, I plan to get the nursery ready, get the 'big boy room" ready for Baby Boy's (who's changed from being a sweet cuddly baby into a Wild Thing), and stockpile my freezer with some meals for after Baby #2 arrives.

Black Friday & Cyber Monday

Were you brave enough to shop black Friday? Did you get any amazing deals?

I have a confession, I did not shop either of those deal packed days!

To me Black Friday seems like torture (I don't like shopping, especially in crowds). I love a good deal, but I also place a value on my time, and I personally feel that if you average the time you spend shopping and standing in line and charge yourself for that, then the deals are just average. However, for the first time in my adult life, I felt a twinge of remorse yesterday. I complimented one of the girls I work with on her shirt. She said she got it shopping at Kohls on Friday, and then she showed me the cutest coat ever and said it was only $7.99 and...it was reversible!

Cyber Monday could be a shopping alternative for me, but I work, have an 18 month old to take care of, and have a husband that is back in school. The Mondays after Thanksgiving are frequently chaos...both personally and professionally (Yes, it's hard for a girl to drag herself out of bed and into the office after a 4-day weekend, and since this is my busy time at work who has time to check out deals online). I wouldn't even know where to begin.

That really cute $7.99 jacket is making me rethink my lack of participation in Black Friday and Cyber Monday. Would you help prepare me for next year? My questions to all the Black Friday/Cyber Monday shopping veterans out there are...

The Best Christmas Parade I Never Saw!

Over the weekend, we drove up to Estes Park. They always do an amazing Christmas lights parade on the Friday after Thanksgiving (or so I have heard). I have wanted to see this parade since I first learned of it. I thought it would be fun, and that Baby Boy would enjoy it. I talked hubby into going, and we called some friends and all trekked up the mountain.

We arrived in Estes at around 3:45. Plenty of time to park, grab a quick bite to eat, and find a seat (or so we thought). Turns out this is a really, really popular parade, and all the restaurants were packed (Starbucks had the longest line I've ever seen!). All the spaces on the curb along the parade route were claimed.

So we grabbed a bench at the best place we could see...and waited...and waited...and waited! 5:30 came, and no sign of the parade, but Baby Boy was getting fussy (and hungry). 5:35 came, Baby Boy was even more fussy and there was still no sign of the parade.

We decided that we must have been at the end of the route, and that we should have time to go in and grab a quick bite to eat and then catch the end of the parade. We went inside our favorite pizza place, and got seated immediately. We ate, and then we went back outside at exactly 6:30. What did we see? Lots and lots of red tail lights!

We completely missed the parade! What a bummer! I guess there is always next year for the parade in Estes! Luckily this parade was early enough in the season that we can always catch another one in the area.

Recipe Swappin' Saturday: Afternoon Snacks

I'm getting Recipe Swappin' Saturday up a little late today. We decided to go to IHOP for breakfast and then we ran some errands. We didn't get home until late this afternoon.

The theme for this week was afternoon snacks. Link up your favorite afternoon snack recipe.

I made a Peanut Butter & Apple Butterfly for baby boy today.

To make this you need:

1 apple
1 -2 TBSP of peanut butter
1 baby carrot
2 small slivers of celery

Assembly:

Slice the apple, and lay the slices in the shape of a butterfly wings.
Put peanut butter down the middle of the apples.
Top peanut butter with a baby carrot.
Stick the celery slivers in the top to make the antenna's.

Optional: sprinkle apple slices with cinnamon sugar.

Chit Chat: What's the point?

For the most part, I don't mind cleaning.

Bathroom...check. done.
Vacuum...check. done.
Dust...check. done.
Windows...check. done.
Mop...check. done.

But when it comes to dishes and laundry, I catch myself wondering "What is the point?"

I hate doing the dishes...they are never done. As soon as you unload the dishwasher, there are more dishes to put in because, let's face it, it isn't like we stop eating or drinking while the wash cycle runs. I would love to always eat off of paper plates and with plastic-ware...but it costs money (which, apparently, doesn't grow on trees) and it is bad for our environment. I guess doing dishes is one of those things that is unavoidable (kinda like taxes)....unless we start eating out for every meal. There's an idea....but I think I would get tired of McDonalds and Wendy's after a while. And if I didn't get tired of the food, I'd definitely get tired of the McHips and McButt that would come with it. So now I am back to unavoidable.

I also hate doing laundry. I think I hate doing laundry more than doing dishes because once again, it is never done...and the process takes forever (at least unloading the dishwasher takes 10 minutes)! But with laundry it's wash, dry, fold, put away. REPEAT. Even if I do get all my laundry done in a given weekend, as soon as it's bedtime, the day's clothes come off and there's more to do. Oh yea...and then you find that shirt that was in your gym bag and those socks that somehow ended up under some random piece of furniture. So, I could probably avoid doing laundry by joining a nudist colony (I could save money on buying clothes too!), but EEEEWWWWW! YUK! I don't even like for people to see me in a swimsuit...let alone naked. Oh and I blush seeing underwear commercials, so how would I handle seeing a bunch of naked people. That just isn't happening...no way! Not ever! Perhaps I could avoid laundry by just buying new clothes when I am out of clothes. Oh wait...I tried that in college. It doesn't work. Eventually you run out of money (because money doesn't grow on trees, remember?) So I guess laundry is unavoidable too.

So even though I may feel like doing dishes and laundry is pointless, I know it is unavoidable. So now it's time for me to quit procrastinating and to start folding that laundry from last night (and of course there are some dishes waiting to be put away too!)

Aspiring Photographer: Colorado Wildlife...Big Horn Sheep

One of the reasons I love living in Colorado, is because of all the wildlife you can see if you are paying attention. I say that you can see if you are paying attention because I don't know how many times we have been hiking and not paying attention and I'll hear something running off. I know a deer or elk was near, but never saw one.

I took these pictures of Big Horn Sheep just outside of Rocky Mountain National Park. Another common place I see them is on the side of I-70 as we drive up to go skiing.

Did you know that the bigger the curl of the horn, the older the sheep?

Have you ever seen two sheep charge each other and knock horns? On this lucky day, I got to witness it (I wish I was at a different angle and could have gotten more than a butt shot). I can't even begin to describe the sound of the horns hitting together...it is thunderously loud. It sounds like knocking two plates together and they don't break. They both must have had quite the headache after they worked out their issues!

If you haven't noticed, I've been away from my Blog lately. It was a long week last week. My company let some more people go on Wednesday. While I was not one of the people let go, it will affect the way I do my job. There will be more red tape to cut through, as I will have to outsource almost every project. Needless to say, in light of all the change at work, I didn't feel like writing at home. I've been seriously reeling and wondering how I am going to finish projects that were left in a lurch, and how I will move forward.

Chit Chat: Dreary Winter Darkness

This whole Daylight Saving time change thing is the pits. It stinks! It bites! I hate it! Now, not only is it dark when I wake up, but it is dark when I drive home as well. At work, I sit in an area where I don't have a window. I never see the sun (well, except for the 35 minute drive I have to work, but that doesn't count in my book).

The only good thing about "falling back" for Daylight Savings is the extra hour of sleep I get one day a year. Oh wait a minute, now that I have a child, that doesn't happen. So really there are no redeeming qualities about the Winter Daylight Savings! (BTW, if you can think of any be sure to leave a comment below and let me know!)

Since the time change, I feel like it is time for Baby Boy to go to bed as soon as I get home from work. There's no more going outside for a walk after we get home. There is no chatting with the neighbors as we unload the car because no one is out working in their yard in the dark. There is no going to the park to play for a few minutes after dinner and before bed.

The Winter Daylight Savings is isolating. I wish we didn't have to turn the clocks back in the Fall. I would prefer it to be dark in the morning when I am rushing around getting ready for work, and to have a few extra moments of sunshine to enjoy in the evening when I get home. Perhaps I can try to change my hours at work...get there early and leave early. It is worth looking into, right?

Chit Chat: Mondays

I dread Mondays. After a fun-filled weekend of playing with Baby Boy and visiting with friends, I do not look forward to dragging myself out of bed on Monday morning. Today is no exception. We had so much fun over the weekend...a Fall Festival at Church, a Halloween party at our house with a pinata for the kids, a Sunday afternoon nap.

Baby Boy is ~~talking~~ babbling more and more. It is so fun watching his little personality emerge.

I wish that every weekend was a 3-day weekend; of course, I do realize that if that wish were granted, I would then want a 4-day weekend. And since it is not a 3-day weekend, I must get back to the grind.

Recipe Swappin' Saturdays: Sugary Treats

The theme for this week was Sugary Treats, so pull out your favorite sugary treat recipe. Post it on your blog and link up. For my Sugary Treat this week, I decided to try a new recipe. Peanut Butter Oatmeal Chocolate Chip Cookies. And, can I just say that these cookies are delicious?! Hubby loved them so much that they were gone by the next morning. I'll definitely be making them again soon.

Peanut Butter Oatmeal Chocolate Chip Cookies

Yield: 25 -30 cookies depending on size of cookie

Ingredients

1 cup flour
1 cup old-fashioned or quick-cooking oats
1/2 teaspoon baking soda
1/2 teaspoon CALUMET Baking Powder
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1/2 cup peanut butter
1 egg
1-1/2 teaspoons vanilla
1/2 bag of chocolate chips (the smaller sized bag)

Directions

Preheat oven to 375 degrees F.
Mix flour, oats, baking soda, baking powder and salt; set aside.
Beat butter, sugars and peanut butter in large bowl with electric mixer on medium speed until light and fluffy.
Add egg and vanilla; mix well.
Gradually add flour mixture, mixing until well blended after each addition. Stir in chocolate chips.
Drop heaping tablespoonfuls of dough, 2 inches apart, onto ungreased baking sheets.
Bake 10 to 12 min. or until lightly browned.
Cool 1 min.; remove from baking sheets to wire racks. Cool completely.

Chit Chat: Let it Snow!

Colorado has been getting dumped on all day. The white fluffy stuff hasn't let up since late last night, and it is expected to keep coming down until mid-day tomorrow. I love snow. Before Baby Boy was born, a good snow meant waking up at oh-dark-thirty, grabbing our ski equipment and getting on the road (before I-70 became a parking lot) to ski.

Now that we have Baby Boy, a good snow causes me to about whether his day care will close early, and wonder how early I need to leave work to make sure I pick him up on time. Now, snow means canceled meetings and uncompleted tasks.

Today I got a call at 11:30 a.m. announcing that Baby Boy's daycare was closing at 1 p.m. I left early thinking the roads must be really bad, and I don't want to be late. As I was driving, I discovered, the roads were mostly clear, with a bit of slushiness on the side streets. Now in my book, a wet road isn't a good reason to cancel school. Not at a time when positions are being scrutinized. Not at at time when companies are trying to figure out ways to cut costs. Not ever.

So, I did a little digging around...the school district in our community did not close today, not a single other daycare in our community closed today, and many of the childcare facilities in the town I work in were still open as of 4 p.m. today.

So now, I am looking for an alternative for my daycare. This is not the first time an unnecessary snow closing has happened, and they take many other non-holiday days off. I can't keep using my very limited vacation time frivolously.

How to...Make Sure Your Photos Aren't Being Illegally Used

As a blogger, you work hard to find that perfect image to illustrate your post each day. Does the thought of someone ripping off the photo that you took of your kids infuriate you? How do you protect yourself?

For starters, you can put a watermark on all your images. This will help prevent people from ripping your images off.

The second thing you can do is a "reverse image look up." TinEye, is online software that will let you upload a photo to see if it is being used elsewhere. You can also look up images by giving it a url to one of your images. This tool is still in beta, so there are a few kinks to be worked out.

Recipe Swappin' Saturdays: 5-ingredients or less

The theme for this week is 5 ingredients or less. I haven't made the recipe I'm about to share in a while, so there aren't any pictures. Sorry. To keep this recipe under 5 ingredients, I'm not counting household staples like cooking spray, ground pepper, and olive oil.

Rosemary-Garlic Pork Tenderloins
Prep: 2 hrs. 15 min.
Cook: 40 min.
# Servings: 8

Ingredients:

1/4 cup minced fresh rosemary
1/4 cup minced garlic
1 Tbsp. Olive oil
2 tsp. kosher salt
1 tsp. ground black pepper
2- one pound pork tenderloins
cooking spray

Instructions:

Mix the first 5 ingredients in a bowl to make a paste.
Make several 1-inch slits in the pork and stuff with 1 tsp. of the rosemary paste. Spread the remaining paste on the top ans sides of the pork.
Cover and chill for 2 hours.
Start grill, and place pork on the grill rack (coated with cooking spray).
Grill for about 23 minutes (or until a thermometer reaches 155 degrees). Turn pork once half way through the cooking.
Remove pork from grill, cover and let stand for 15 minutes. While the pork is standing, the internal temperature should go up to about 160 degrees.

Aspiring Photographer: Pumpkin Patch 2009

We went to the Pumpkin Patch last weekend. We've been going to the same place since before Baby Boy was born. They have a giant corn maze, barrel rides, pony rides, animals to look at (llamas, cows, chickens, goats, rabbits, sheep, and ducks), food and many activities for kids. You have to take a wagon ride out to the pumpkin patch. It was a lot of fun.

"Why doesn't this pumpkin make the same music as my bongo drum?"

"Since I don't have a "passie," I'll suck my thumb."

"If I try hard enough, I know I can get this baby pumpkin in my pocket!"

Chit Chat: Weekend Report

I didn't blog much this weekend. The weekend went by in a blur. Here's what I was up to:

I did watch the Ugly Betty 2-hour season opener.
I did get the kitchen floor mopped.
I did get the taco soup off the ceiling (one of those things that happen if you turn you back on a 17 month old for 5 seconds and you have no idea how it happened).
I did get the bathroom cleaned.
I did get the house dusted.
I did get the house vacuumed.
I did get almost all the laundry washed, folded and put away.
I did attend a barbecue and catch up with some friends.
I did take turn with hubby following Baby Boy around and around and around friends house to ensure nothing got broken.
I did wonder why "of all the other 5 toddlers/preschoolers at the barbeque, mine was the only one who couldn't sit still and required constant supervision."
I did have lunch with a friend I haven't seen in a long time.
I did watch the movie I rented last Sunday.
I did get to church almost on time.
I did get Sunday lunch in the crock pot before church.
I did spend the afternoon at the pumpkin patch with my family.
I did have lots of fun.
I did smile and laugh as Baby Boy told me "I need more" while I was sharing my ice cream with him.
I did relax after Baby Boy went to bed on Sunday night.

And the things I blew off...

I did not fold the last two loads of laundry.
I did not blog more than 30 minutes.
I didn't post the blog awards I received a few weeks back and have been procrastinating posting. (Maybe I'll get to that tonight).
I did not exercise or run (except after baby boy).
I did not return the really overdue book to the grocery store.
I did not go to the grocery store.
I did not plan any meals.
I did not work on any of my projects I brought home.
I didn't knit (or crochet)...I'm never going to finish the baby blankets I am working on.

Overall, I'd say it was a pretty good weekend. I'm amazed at how much I got done. Although, not having my meal planning done will probably make for a pretty chaotic week. Maybe I can sneak out of work early and make a quick trip to the grocery store before picking baby boy up from daycare this evening.

Recipe Swappin' Saturdays: Fruity Spinach Salad

I first had this at a company work party. I've switch it up over the years, added ingredients, swapped ingredients, and here you have it.

Fruity Spinach Salad
Ingredients

1 bag of spinach
1 small can of mandarin oranges
1 cup of chopped strawberries
sliced red onions (to taste)
2 - 3 Tbsp. Feta cheese
salmon (optional)
Brianna's Blush Wine Vinaigrette

Instructions

Cook salmon.
Put spinach in a bowl.
Chop strawberries and add to bowl.
Drain oranges and add to bowl.
Slice onions and add to bowl.
Sprinkle salad with Feta.

Serve salad on plate with salmon on top, drizzle Brianna's Blush Wine Vinaigrette over the top.

I said I was going to do a few more posts on homemade Halloween or Fall Festival costumes. I had thought I would have time to shop, find some c ap supplies, and then make my post. Being a full time working mom with an 18 month old, the shopping part didn't happen. So you will have to use your imagination for this one.

How to make a Jedi Costume
Supplies:

burlap sack (here's one for $3.69)
off-white or brown turtleneck (free if you have one on hand or can borrow one)
thick brown ribbon, or a brown belt (free)
brown tights (or sweat pants) (free if you have some, or borrow some)
blue tempera paint ($2-5)
aluminum foil
an old wrapping paper roll (free)

Make it:

Cut head and arm holes in the burlap sack.
Paint the wrapping paper roll blue, and put a bit of aluminum foil on the end to make a handle. You may want to "twist" the last few inches to make the handle part smaller and more stable to hold.
Put on turtleneck and sweats/tights, and layer over the burlap sack. Put belt/ribbon around the waist.
Grab your blue light saber, and you are ready to go get some candy.

The weatherman predicted it right for once. We woke up to snow Saturday morning. Check out my Autumn Blaze Maple with snow on it.

You might think it is a little early for snow; I know I do. Other than the red leaves, this picture could have been taken in January. I'm just glad that hubby got the sprinklers blown out on Friday night, since the news reported that lots of people were experiencing broken water pipes.

Recipe Swappin' Saturdays: Individual Chicken Pot Pies

The theme for this week was chicken, so I decided that I would make Individual Chicken Pot Pies.

Individual Chicken Pot Pies
Prep Time: 5 minutes
Cook Time: 30 minutes

Ingredients

1 package of refrigerated pie dough
2 cups of chopped chicken breast (I used 1/2 a rotisserie chicken)
2 cups of frozen mixed vegetables , thawed
1 (10-3/4 ounce) can of 98% fat-free cream of chicken soup , undiluted
1/4 cup of skim milk
1/4 tsp. salt
1/4 tsp. black pepper
cooking spray

Directions

Preheat oven to 450.
Combine the chicken & the next five ingredients in a large microwave bowl.

Microwave on HIGH for 2 minutes or until warm (stir 1/2 way through).
Unroll dough, lightly roll in out, and then quarter the pie shell.
Line a large muffin tin with 1/4 the dough, like in the image below. (I used my Demarle Texas Muffin Tray, which I love!)

Fill the dough with the filling and pull the corners together and seal them.
Lightly coat the top of the pot pies with the cooking spray.
Bake at 450 for 15-18 minutes (or until the crust is golden brown).

When I plan a trip, I go to great lengths to make sure I am getting the cheapest airfare possible. My dad worked for the airlines, so I grew up flying free and so I hate paying for a ticket. Over the years I've made a few observations that help feel confident I'm getting the best fare out there. Here are 3 tips to help you get the best fare for your upcoming travels:

1. The lowest listed fares are usually on Tuesdays and Wednesdays.

2. Use Expedia, Orbitz and other travel sites to see available fares, but make sure to double check the airline site. Often I can save $5-10 on service fees, and they have more time options.

3. Figure out what you will be paying to check baggage, for the emergency exit row, etc. Many airlines have extra fees these days. I love Southwest because they don't have baggage fees . I recently booked a trip on a different airline because the fare listed was cheaper. After getting to the airport and paying over $100 (each way) for baggage fees, it would have been cheaper for me to fly Southwest.

Based on all the encouraging comments I got on my post yesterday, I decided that I would do a series on inexpensive, homemade costumes. I will be posting ideas every 3-4 days. If you have an idea for me to attack, leave me a comment!

How To...Make a Turtle Costume

It's that time of year where everyone starts thinking Fall Festivals and Halloween. I see very pricey Halloween costumes at every store I walk into lately. I personally prefer to make my own costumes for Baby Boy, since with a little creativity, I can usually make super-cute and way-less- expensive costumes. Please note that this costume works best with infants that are are at least sitting through toddler age.

To make a Turtle costume, you will need:

1 pair of green sweats
an old bicycle helmet

2 shades of green paint (I used acrylic paint)

a couple of sponge paint brushes

To start, make what will be the turtle shell by painting the entire old helmet the lighter shade of green paint. Once the paint has dried, go back and paint "spots" all over the helmet with the darker shade. Start by painting the air vents, and then fill in excess space strategically. Your painted helmet should look similar this.

Finally, dress the child in the green sweats. Put the turtle shell (or helmet) on the child's back, and then admire the end result.

Chit Chat: Getting Ready for the Season Change

In case you didn't know, summer is officially over and it's now Fall. We spend Saturday up in Rocky Mountain National Park watching the elk bugle. This is an annual tradition for us (check out last years pictures here). This year we took a couple of Baby Boy's friends, so their parent could have a date night before their 3rd baby arrived in a few weeks. I didn't get too many good pictures because I was too busy entertaining 3 little boys.

Anyway, we had a great time. While the boys were climbing rocks, a bull elk walked by in the field below and bugled. Baby Boy decided to bugle back, which in some ways was quite humorous, but I also held my breath since depending on how the elk responded it could have been an accident waiting to happen! When we saw the second, bigger, bull elk, Baby Boy didn't just want to bugle back to it, he wanted to pet it or ride it...who knows what was going through his mind. Every time he thought we weren't watching, he'd try to make a break for it (Note to self...Don't let your baby ride pony's at the county fair until they are old enough to understand not all animals are tame). It truly is a good thing that Baby Boy's friends were well behaved and listened to our directions.

As we were driving down the mountain, I was thinking it won't be long before we start getting snow. We had the threat of snow last week one day, but the weather man was wrong. So now, I am scurrying around gathering supplies and building up my arsenal to entertain Baby Boy on days we are stuck inside.

So far we have crayons, finger paint, construction paper, glue. I'm not sure what else I'll get. I'm looking for suggestions. Baby Boy is almost 18 months old. What would you stock in your rainy day supply cabinet for an 18 month old? Leave a comment and let me know.

Fall is a beautiful time here in Colorado. At least once during the season, we try to get up to the mountains to see the the Elk while they're bugling (They do this during the rut...a.k.a. mating season).

Check out this little elk. He's sitting there chomping his grass so peacefully.

This Bull Elk was not the biggest one we saw this day, but he's pretty big.

Chit Chat: In the Quiet of the Morning

Saturday morning Baby Boy woke up entirely too early for my likes (5 a.m.), so I got up and brought him back to bed with me (hubby had already left to go hunting). Baby Boy was happy with this solution, and went back to sleep. An hour and a half later, I feel Baby Boy reach up and pet my hair, and then he rubbed my face. I said to him, "shhhh. Be still." So then he sits up and falls back on me and laughs, and again I say to him, "shhhh. Be still." Next, he proceeds to stand up and body slam me (he wrestles with his dad a lot), and again I say to him, "shhhh. Be still." Needless to say it was obvious that this boy was ready to start his day. So I got up and fixed breakfast.

As I was watching him eat, I was thinking about the start of our morning, and I wondered...

As busy and hectic as things have been lately, how many times has God said to me, "shhhhh. Be still." And how many times have I responded the same way as Baby Boy did earlier this morning?

Unfortunately, the answer to those questions are quite humbling. There have been too many times that I have refused to "Be Still" before God, and on Saturday morning, He finally got my attention...through the actions of a 17 month old boy.

September Shred: Days 15-19

Today, I'm thinking about survival mode. I'm not talking about how-am-I-going-to-survive-this-workout survival mode; I'm talking about how-am-I-going-to-meet-these-deadlines, I've-got-too-much-to-do-and-too-little-time survival mode. You see, I have several large projects that I am working...and they all come due within a week or two of each other. I am really starting to feel the stress of this.

For some reason, when I start feeling stressed, I cut my workouts from my daily routine. Not good, right? Well, I fell off the exercise wagon earlier this week, but I got back on..in a non-traditional way (Learn more about my non-traditional shred at the September Shred Blog.)

How To...Cooking Family Dinner (A Working Mom's Guide to Making a Home Cooked Meals During the Week)

Many families have busy schedules these days, and we are no exception. As a working mom I find it incredibly difficult to get home, fix dinner with a hungry 17 month old hanging on my leg, and keep my sanity while doing it. A few weeks ago, I decided that something had to change, so I implemented a plan that has worked really well for us so far.

Every week, I do meal planning before I go to the grocery store (this saves us money too). I write the meals on my calendar.
I cook my big meals that may require more time to prepare on the weekends while the baby is napping and hubby is home to distract the baby (if necessary).
At least twice a week, we eat leftovers. (Leftover night at my house is on Mondays and Wednesdays while hubby is at school).
On Mondays and Wednesdays, after Baby Boy is in bed, I fix the meal for the next day.
Friday's is the anything goes night, some nights we have pizza, some nights we go out somewhere that will serve us our food quick, or we pick up some take home after work.

Here's what we at this week:

Sunday: Poppyseed Chicken, Green Beans, salad.
Monday: Leftovers.
Tuesday: Spaghetti with Italian sausage.
Wednesday: Leftovers.
Thursday: Taco Soup
Friday: Pizza night
Saturday: Venison Steaks, mashed potatoes, mixed veggies. If I have time during the day, I may whip up something decadent for dessert.

I think this plan works because by making the bulk of the meal the night before and only having to warm it when I get home, eliminates many excuses (such as I'm too tired, we don't have anything to eat, or I'm starving and can't wait long enough to cook something). I also think by eating leftovers 2 nights a week and then cooking gives me a chance to recharge.

Chit Chat: Weekend Hunting Widow

Saturday was the opening of Muzzleloader Season here in Colorado. Hubby hunts every chance he gets (his chances are a lot less frequent since we got married). Muzzleloader Season is his favorite season. It's a great time to be out in the woods, the aspens are turning, and normally, the weather is nice. Because he's gone back to school and works full time, Hubby opted to hunt in the foothills near our town and only to hunt Saturday and Sunday. The area he drew his license for is a heavily trafficked area with lots of ATVs and weekend campers. So, Saturday morning at 4 AM, Hubby's alarm went off and we took off on his little adventure.

So...back on the home front, the weather was rainy and cool here. Baby Boy and I were stuck indoors (for the most part).

After dinner, I was getting Baby Boy out of his high chair...

Baby Boy: Dada! Dada!
Mommy: Daddy is hunting; he won't be home until after bedtime.
Mommy: The weather is pretty yukky outside.
Baby Boy: Yeeeaaaah!
Mommy: Do you think Daddy will bring home a deer?
Baby Boy: NOOOOOOO!
Mommy: Me either, but I'm sure he's having fun exploring the woods.

Just then....

The door open and in walks Hubby! As I tell Hubby about this little exchange, we chuckle. Turns out Hubby did get a deer (and to think I thought he was just looking for an opportunity for some alone time).

Tonight...I spent my evening grinding and packaging meat! (Yuk--I'll spare you the pictures!)

September Shred: Days 8 - 12

I've stepped up and taken the 30-day Shred challenge put of by In the Trenches of Mommyhood. I started out strong; lately, however, my motivation has been a bit wavering. I skipped Day 8, worked out on Days 9 & 10, and then skipped Day 11.

Yesterday, Day 12, I started Level 2. Oh man is it hard! In hindsight, perhaps the reason I had been skipping workouts is b/c I was getting bored with Level 1...I mean how many times can you hear Jillian say, "I could always use a good chest fly," and not tune it out.

Anyway, I've moved on to Level 2, and boy can I feel it.

Travel Tip: Packing Made Easy a.k.a. How To Pack for Kids

Last year after baby boy was born, my entire family came to visit. My sister-in-law shared with me how she simplifies packing for her 4 girls. I thought it was ingenious, so now I am sharing it with you:

Buy a box of the gallon sized Ziploc bags.
Put one outfit in a bag (undies, tights/socks, skirt/pants, shirt, sweater, etc.).
Label the bag with the child's name.
Repeat for each child and for each day you will be gone.

Now you kids outfits are neatly packed, and easy to pull out of the suitcase. Plus, you'll save time by not having to coordinate outfits. Heck! Since the outfits are already coordinated, the kiddos could even choose which one to wear.

I love sloppy joes. They are fast, easy and inexpensive to make. For some reason, every time I make these, it makes me think of Halloween. I doubt we had these every Halloween, but I do remember my family sitting at the table eating dinner and eating sloppy joes before going out trick-r-treating. I couldn't tell you how old I was or what my costume was, I just remember we at these just once on Halloween...and they were Mmm, Mmm good!

Sloppy Joes

PREP TIME 15 Min
COOK TIME 20 Min
READY IN 35 Min

Servings 4

INGREDIENTS

1 lb of ground beef
1/2 to 3/4 a green pepper (chopped)
1/2 to 3/4 a medium onion (chopped)
15 oz. can of tomato sauce
salt
pepper
hamburger buns

DIRECTIONS

In a large skillet, brown the ground beef.
While the beef is browning, chop the green pepper and the onion.
Drain the grease from the beef, and mix all the ingredients together in the skillet.
Let them simmer for 20-30 minutes (until the pepper and onion are soft).

I've survived 7 days of Jillian's torture! Well, truth be told, we went camping this weekend, so it has really 6 days of torture.

Tonight, I did the workout with Baby Boy. For some reason, he thought it was great fun to lay under me during the push ups, lay on top of me during the sit ups, bicycles, and every other core muscle exercise. I, on the other hand, did not find this great fun! I did find his antics a bit humorous, but not humorous enough to workout with him again for a long time.

At only a couple month old, Baby Boy was always covered to avoid sunburn, and he was always carried on the front. He could have cared less if a chipmunk or bear crossed our path, as he slept through most the hike.

This year, hiking was quite the adventure for Baby Boy and whomever was carrying him. From kicking, hair pulls to sweet hugs and squeals from our passenger, there was never a dull moment. Baby Boy was very good at pointing out deer, chipmunks and whatever he saw!

Nap time was almost all the time last year. Baby Boy could crash out no matter where he was!

This year, it was all about playing and getting dirty (until Mommy had enough and corralled Baby Boy in the pack-n-play)!

September Shred: Day 4

I think I hit a turning point. Here's why:

My muscles didn't scream in agony as I dragged myself out of bed this morning.
I even try to stop or pause for a few seconds during the workout (except when I paused the entire DVD after the warm-up for a potty break).
I don't feel my body jiggle as much during the jumping jacks
I was trying to think up fun names (like the Double Crappy Lawnmower) for the exercises instead thinking about how annoying Jillian is.

I'm shredded! Just finished my workout. How do I get so sweaty (and stinky) in just 20 minutes? That Jillian is tough.

After weighing myself this morning, I've been wondering, "how is it that weight can creep on soooo fast, and it is so slow to come off?"

Oh well, I'm 27 day from a new, lean, smokin'-hot body!

2 Days Down, 28 to Go!

I could feel my muscles being shredded into shape this evening! Jillian's 30 Day Shred is one tough workout!

If you are just stopping by for the first time, In the Trenches of Mommyhood challenged her followers to join her doing Jillian Michael's 30 Day Shred in September, and I was up for the task — or at least I thought I was!

I think I will be sore tomorrow and will probably use the elevator. Maybe I'll take a soak in the tub with Epsom salt.

Anyone got a tip for sore muscles? I'd love to hear it; leave a comment!

Aspiring Photographer: Conundrum Creek Trail

These were all taken pre-Baby! We use to go backpacking once a year with our neighbors. This was our first trip. We did a 9 mile one way, 3000 foot elevation gain hike up to the highest natural hot springs in North America, Conundrum Spring. The trail head was located just outside of Aspen, Colorado.

In June, this water was icy cold. I couldn't feel my feet by the time I got across. My neighbor was kind enough to take this picture (above)and pass it along.

He took this picture too! I feel so small in the midst of God's creation here.

There were waterfalls everywhere!

September Shred: Day 1

So I came across In the Trenches of Mommyhood a few weeks ago. I enjoy Sarah's blog, so when she challenged bloggers across the blogosphere to join her doing Jillian Michael's 30 Day Shred in September, I opened my big mouth and committed to doing it and blogging daily about it. (What was I thinking?!)

Today is Day 1. I'm exhausted (before I even started)! I have dreaded starting all day today. Baby Boy is cutting teeth and was up several times during the night (he's been drooling like a St. Bernard lately!). But I'm ~~a glutton~~ dedicated, and since I said I would "Shred," I did. I even survived. Now I'm going to reward myself. I'm heading to the freezer to grab myself an ice cream. Is that bad? Does it make it better if it is a Skinny Cow? Maybe by Day 30, I'll be motivated to break my ice cream habit!

Tasty Treat: Adobo Pork Chops

My friend, Rebekah, made this marinade for us the week I went back to work after Baby Boy was born. I believe she got the recipe from her bake and freeze club at church. This has marinade become a favorite at our house. Sometimes we substitute chicken for the pork chops. By the way, this recipe freezes well. I like to serve it with black beans, sweet potatoes, and mixed veggies.

Adobo Pork Chops

PREP TIME 10 Min
COOK TIME 12-30 Min (depending on the thickness of the meat)
READY IN 2 Hrs and 20 Min

Servings 6

INGREDIENTS

6 each Pork Chop Loins
2 Tablespoons Brown Sugar
2 Tablespoons Olive oil
2 Tablespoons Orange Juice
2 Tablespoons Cilantro (chopped)
1 Tablespoon Red Wine Vinegar
2 Teaspoon Chili Powder
1 Teaspoon Cumin
1 Teaspoon Oregano (dried)
1/2 Teaspoon Salt
1/4 Teaspoon Cinnamon (ground)
3 Cloves of Garlic (minced)

DIRECTIONS

For the marinade, combine brown sugar, oil, orange juice, cilantro, vinegar, chili powder, cumin, oregano, salt, cinnamon, and garlic. Pour over the pork chops in a gallon Ziploc bag. Marinade in the refrigerator for at least 2 hours (or freeze it).
To cook, (thaw chops if necessary) grill the chops on the rack of an uncovered grill directly over medium heat until juices run clear (160 degrees), turning halfway through grilling. I like to brush with the marinade a few times while grilling.

Chit Chat: You Can't Turn It Off

So the other night, I had a headache. I took two Excedrin PMs and went to bed. I was sleeping fine until this horrible noise started coming out of the baby monitor. I started rooting around trying to figure out how to turn this thing off.

My hubby said to me, "What are you doing?"

And I replied, "Trying to turn this thing off before it wakes everyone up." [My parents are visiting, so I guess that is what I meant by everyone.]

To which he said, "You can't turn that off--it's the baby. You gotta get up and check on him!"

And to think I thought it was the alarm! Hum...maybe I should rethink the Excedrin PMs.

Travel Tip: 3 Days in San Diego

Sightseeing in San Diego (A Sample 3-day itinerary)

San Diego is one of my favorite place to visit. It is a beautiful city, and there is a ton to do there! While I was in college, it seems I made a lot of friends that were from S. California, and it was always fun to go visit. Whether I was trying to learn to surf, eating fish tacos and carne asada burritos, or chillin' in Sea Port Village, or hanging out at a bomb fire on the beach, I always had a blast.

If you only have 3 days to spend in San Diego, I recommend you do the following:

Day 1

Start off at the San Diego Zoo. To be honest, I couldn't decide whether to recommend the Zoo or Sea World. But then I figured, if it was good enough to be on top of Ross' list for his monkey, Marcel, then it was worth the visit (and yes, I'm a Friends fanatic!). Be prepared to walk, be prepared for hills, but also be prepared to be amazed and awed by both the animals and the
plants. This zoo is one of the largest zoo's in the country. Make sure you check out the Panda exhibit--one of the Panda's just had cubs. When I was there a few years ago, the Panda cubs were the highlight of my trip.

Grab a beverage at the "Top of the Hyatt" at sunset. The Top of the Hyatt, gives you one of the best views of the city. On one side, you can look across the Bay to Coronado Island, and on the other, you can see the city and Petco Park.

After checking out the view, walk over and spend the evening at Sea Port Village. Grab some dinner, ride the carousel, and browse through the shops. Sea Port Village is a great place to people watch.

Day 2
Spend the day at a leisurely pace. Head up to see the La Jolla Sea Caves. While you are there, sign up for a Sea Kayak tour or snorkel in the cove, if you would like. Shop in some of the boutique shops, and grab a bite to eat.

When you are ready, drive back down to San Diego the scenic way--mosey along Pacific Coast Highway 1. Stop at every beach along the way. Grab a carne asada burrito or a fish taco at a little taco stand for dinner.

Day 3
In the morning, hang out at Balboa Park. You can find anything and everything to do here...museums, golf and tennis, hiking and biking trails, and of course, the zoo. Catch a tour or stop by the Visitor Center for help planning your day.

In the afternoon, tour the USS Midway. Be amazed by this enormous air craft carrier. If you are still up to touring ships, treks a few yards down the sidewalk to the Maritime Museum. Check out some of the historic ships that are open for tours.

For dinner, grab some seafood at Anthony's Fish Grotto. This place is so good, my mouth waters just thinking about it.

Chit Chat: A Humbling History Lesson

The other day, I was driving to work and the radio station's "Patriotic Moment" came on the air. A prerecorded voice read the Pledge of Allegiance...

I pledge allegiance to the flag of the United States of America, and to the republic for which it stands; one nation, indivisible, with liberty and justice for all.

[Insert sound of screeching breaks] Wait a minute, where's the "under God?" He just left out the "under God!" Did I hear that right? When did they change the pledge? This isn't the pledge I learned in school! How could I not know that the pledge was changed? " This rendition of the pledge really ruffled my feathers. (Note to self: Stop trying to get by glimpsing at the Yahoo headlines, watch the news more!)

Breathe...listen...learn. The person reading the pledge, went on to say that in his life time the words "under God" were added to the pledge and Alaska and Hawaii became states. Wouldn't it be ashame if the students quit learning the pledge because of these two words, he asked.

Still not convinced that the words "under God" weren't always in the pledge, I brought it up with my "lunch bunch" at work. Our conversation went something like this?

Girl 1: "What radio station were you listening to?"

Me: "Some country one...I don't know which one!"

Girl 2: "Oh, I bet it was "xyz!" They do that every morning. It is some Senator talking! He probably knows what he is talking about...I doubt he'd make that up."

Girl 1: "When did Alaska and Hawaii become states?"

Girl 2: "I don't know, how's your pasta?"

Girl 1: "Great, it comes with its own strainer on the container."

They clearly weren't as distressed over this as I was. And went home thinking that voice on the radio was smoking crack. So this morning, I did a bit of research. My findings:

the words, "under God" were added to the pledge in 1954.
Eisenhower was president at the time and signed the bill to change the pledge.
The man to first initiate the addition of "under God" to the Pledge was Louis A. Bowman (1872-1959).

Why, oh why, did I never learn this in school? Clearly, I must have been distracted the day this was taught. I apologize to the voice on the radio.

Oh, and by the way, if you were wondering...Alaska and Hawaii became states in 1959.

As I mentioned in a post a few days ago, I am part of the Kraft First Taste Club. As I member, Kraft sends me coupons to try new products for FREE, and then I give them my feedback on the survey.

My offer for this month was Velveeta Shells & Cheese cups. I was excited about this...since as a full-time, work outside-the-home mom, I am always looking for fast and easy meals for my on-the-go family.

I decided to try and make this a meal. I heated and added frozen carrots, peas, and green beans, and chicken nuggets (all heated in the microwave).

The results...the shells and cheese were delicious (I couldn't even tell they were a fast and convenient version of the box)! The were super easy and fast to cook, and the best part...minimal clean up! The chicken gave extra protein, and the veggies ensured Baby Boy got his daily dose of healthy.

Will I buy again? For me and hubby...definitely yes! For Baby Boy...not for a while. Have you ever heard of a kid that doesn't like mac and cheese or Velveeta shells and cheese? Tasty Treat: Slow Cooker French Dip Sandwich

Super easy...super fast prep, and oh, what a treat! One of the girls I work with gave me this recipe a few years back, and I made some modifications. Heat up some of your favorite veggies and a side of fries, and you've got comfort food! Enjoy!

Easy Slow Cooker French Dip

PREP TIME 10 Min
COOK TIME 7 Hrs
READY IN 7 Hrs 10 Min

Servings 8

INGREDIENTS

* 4 pounds rump roast
* 1 (10.5 ounce) can beef broth
* 1 (10.5 ounce) can condensed French onion soup
* 1 (12 fluid ounce) can or bottle beer
* 9 slices of either Mozzarella or Provolone cheese (optional)
* 6 French rolls
* 2 tablespoons butter
* 1 packet of Lipton French Onion Soup Mix (optional)
* 1 container of sour cream (optional)

DIRECTIONS

Trim excess fat from the rump roast, and place in a slow cooker. Add the beef broth, onion soup and beer. Cook on Low setting for 7 hours.
Preheat oven to 350 degrees F (175 degrees C).
Split French rolls, and spread with butter. Bake 10 minutes, or until heated through.
While rolls are heating, mix the Onion Soup mix with the sour cream.
Slice the meat on the diagonal, and place on the rolls. Put a slice of cheese and some Onion soup mixture on the roll. Serve the sauce for dipping.

Sightseeing in Dallas (A Sample 3-Day Itinerary)

Dallas...home of the Cowboys, the place where Kennedy was shot, and home of the original Neiman Marcus! If you've only got three days to spend in Dallas, you are going to be busy! Be prepared to SHOP, EAT, and GO, GO, GO!

Day 1

Start your day, fueling up at Breadwinners on McKinney (the Uptown location). This is a popular local hangout so get there early or be prepared to wait. After breakfast, head over to Delany Plaza...this is where John F. Kennedy was shot. While there, tour the 6th Floor Museum. Delany Plaza is in the Historic West End area of Dallas, so spend some time walking around. If you're hungry, grab a quick bite to eat.

Next stop...the Dallas World Aquarium. Spend the heat of the afternoon exploring marine (and various other wildlife) from around the world.

Are you tired yet? Return to your hotel and freshen up for dinner. Enjoy dinner at Five Sixty by Wolfgang Puck. It is in the Reunion Tower (You know, the iconic-ball that lights up the Dallas skyline). I highly recommend making reservations.

Day 2

Shop 'til you drop! Start at the original Neiman's in Downtown. I personally never buy anything here, but it is always fun to window shop here. You'll get the "Pretty Woman" shopping experience (the second one)...without the sugar daddy to bank roll you.

Then trek up to North Dallas and visit the Galleria. Peruse the specialty boutiques, grab a bite to eat, and twirl around on the skating rink.

Freshen up at your hotel for diner and set out for dinner. Plan to dine at one of my favorite places...Patrizio's. It's located in Highland Park Village. They have a fantastic patio and great Italian food. Not in the mood for Italian? Try Mi Cocina...just across the way. They have some of the best Tex-Mex.

Day 3

Spend the day at a slower pace and experience life in Dallas during the late-1800's at Dallas Heritage Village. If that isn't your thing...well perhaps a leisurely day at Southfork Ranch...yes, the legendary Dallas Ranch where the 1980's TV show "Dallas" was filmed. The first time I toured Southfork, I was amazed at all the "Camera tricks."

No trip to Dallas is complete without eating at a Steakhouse. If you visit the Heritage Village, go to Bob's Steak and Chop House on Lemmon Avenue. If you go to Southfork, then dine at III Forks on the way home.

Visiting Dallas in the summer? Check out whether Shakepseare in the Park coincides with your trip, and make sure to squeeze it in somewhere.

Figure out what you can afford to pay. If you have saved up cash, then make sure you hold enough back to cover insurance, taxes, and gas. If you are going to be taking out a loan, then consider insurance, taxes and gas as part of your monthly payment.
Test drive several cars that you are considering to see which one is the best fit for you.
Visit Edmunds.com or Kelley Blue Book (KBB.com) to compare all the specs for the model you wish to buy. Keep a copy close on hand for your own personal reference during the negotiation process.

2. Guesstimate the lowest amount the dealer can take and still make money.

Don't forget about the hold back price (the amount the dealer gets from the manufacturer for every car they sell), which is usually around 3%.
Ask the dealer to see his copy of the invoice (each car has its own invoice, so Kelley and Edmunds may not be exact).

3. Begin the Negotiation process.

Get an offer on the new car from the dealer.
Counter the offer. Be honest with the dealer, tell him, that price is to high. That you want to work to make sure both parties benefit from the deal.
Be patience and stay firm in your offer. The dealer is going to try and get as much as he can.
Walk away, if necessary. If you feel you are being fair by the dealer, and he won't budge, walk away and go to another dealer. As you walk away, make sure that you leave the door open for them to contact you should they change their mind.
While paying cash is preferable, it doesn't work our for in all circumstances. Once the dealer accepts your offer, start negotiating the interest rate (if it isn't a zero % financing offer).
Negotiate any extras you may want, like tinted window's or car alarm.
Finally negotiate the price of your trade-in car.

This recipe came in my Taste of Home magazine a few years back. It instantly became a favorite because it it easy to make, it tastes great, and it isn't too rich or heavy!

Rustic Apricot Tart

PREP TIME 15 Min
READY IN 40 Min
SERVINGS 6 Servings

INGREDIENTS

1/4 cup plus 1 teaspoon sugar, divided
2 tablespoons cornstarch
1/2 teaspoon pumpkin pie spice
3 cans (15 ounces each) reduced-sugar apricot halves, drained
Pastry for single-crust pie (9 inches)
1 egg white, beaten
2 tablespoons sliced almonds
1 tablespoon fat-free milk

DIRECTIONS

In a large bowl, combine 1/4 cup sugar, cornstarch and pumpkin pie spice. Add apricots and toss to coat.
Place pastry on a parchment paper-lined 12-in. pizza pan. (I use my Pizza Stone with no parchment paper)
Brush with egg white to within 1-1/2 in. of edges.
Spoon apricot mixture over egg white; sprinkle with almonds.
Fold up edges of pastry over filling, leaving center uncovered.
Brush folded pastry with milk; sprinkle with remaining sugar.
Bake at 375° for 35-40 minutes or until crust is golden and filling is bubbly.

Allow it to cool and then enjoy!

Travel Tip: 3-Days in St. Louis

Sightseeing in St. Louis (A Sample 3-Day Itinerary)

St. Louis is a great city to visit with kids. If you only have three days to spend in St. Louis, here are some of the highlights you won't want to miss. There are many attractions in St. Louis, so it may be a place that you want to visit again.

Day 1
You can't visit St. Louis without going up in the St. Louis Arch. Plan to get there early to make sure you can go to the top. While you are there, make sure you check out the museum, and watch the movie on the making of the arch. It cost $10 to go to the top (with a National Parks Pass, it's only $7) and the movie is $7.

Depending on time, spend some time walking the Arch Grounds, and then head over to Scott Joplin's home and take a tour of the "King of Ragtime's" St. Louis home. Tours are $2.50 for adults.

After the tour, go to the City Museum. There are 4 floors of exhibits to explore. It's open until 1 a.m. on Fridays and Saturdays. Admission is $12.

Day 2
On day 2, plan to explore some area's outside the city. Start of going out to Defiance, Mo and visit Daniel Boone's Home and Boonesfield Village. A 2-hour tour of both the home and village is $12.00.

After the tour, understand a little bit more of Missouri's history by visit Old St. Charles. Stroll along Main Street and check out the shops. Walk down to the river. Take a tour of the First Missouri State Capital. Tours are $2.50.

Day 3
Spend the last day in St. Louis at Forest Park. There are a plenitude of attractions to capture your attention here. Start at the St. Louis Zoo. Basic entry is free, but for some of the attractions, like the Children's Zoo and the train, there is a fee.

Next, walk up the hill to the Art Museum. The Art Museum is free; however, there is a fee for the featured exhibits.

If it is summer time, make sure to take in a show at the Muny. There is a section of seats in the back that are free on a first come first serve purpose. Make sure to get there early if you are opting for the free seats.

FINAL NOTE: Make sure to drive over to Ted Drewes on Old Route 66 (Chippewa). It's a St. Louis tradition. They serve the best frozen custard ever! (If you're not sure what to order...get a Fox Trot Sundae for me!)

A few years ago, hubby and I took the Financial Peace Class at our church. The class was wonderful. I recommend it to all my friends that are getting married, that have teenagers leaving for college, and for anyone that just wants to learn to manage their money better.

I have learned that having a budget is crucial for saving money. It enables you to manage your money better, it gives you visibility where your money is going, and it highlights areas where you could save more.

To create a budget:

Get out all your bills from the last month.
Start making a list and recording all your bills. A sample list you may want to track could look something like:

Mortgage/Rent
Home Repairs
Home Owners Insurance

Electric
Water
Gas
Phone (cell/land line)
Trash
Internet

Car Payment(s)
Gas, Oil changes
Repairs
Insurance

Disability

Get out your paycheck stubs for the month, add them up, and determine whether you are in your budget.
Analyze your budget.

If you are within your budget, congratulations! Now you should start adjusting to determine where you can save.

If you are spending more than you make, then look for areas of spending that you should cut back on or eliminate (i.e. Do you need both a land line and a cell phone?, Could you eat out less?).

Repeat this every month. Are you saving more? Are you eliminating debt?

My good friend Stacia sent me this recipe. It is great for when you are having a chocolate craving. One coffee mug makes enough to share (if you should choose).

5-MINUTE CHOCOLATE MUG CAKE

PREP TIME 2 Min
READY IN 5 Min
SERVINGS 1 -2 Servings (depending on how generous you are feeling).

INGREDIENTS

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (Microwave Safe)

DIRECTIONS

Add dry ingredients to mug, and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well..
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
Enjoy!

Chit Chat: County Fair Visit

This weekend we spent a few hours at the county fair. Baby Boy got to ride the pony's. He seemed to really like it...especially compared to the other little boy close to his age. While at the pony ride area, I got to witness 2 boys about the same age, with 2 very different reactions.

Every time Other Boy's pony came around he (the boy, not the pony) looked absolutely miserable. His face was red and blotchy, and he was trying to climb off the pony. His dad just held him on the pony...no matter how much Other Boy squirmed his Daddy was going to make him wear his big boy pants and tough it out.

On the other hand, Baby Boy had a smile on his face most the time, waved at me a few times, and would lean forward to pet the pony every once in a while. I was so proud of Baby Boy's bravery and sense of adventure.

As I was snapping photos of Baby Boy and watching Other Boy on their pony ride, I wondered:

Why do some kids just embrace a love for animals, and others react with fear?
Is it the disposition of the kid, the reaction of the parents, a little of both, or neither?
Do kids with pets respond to other animals better?

In the grand scheme of things, I guess these question don't matter, since Baby Boy enjoyed his pony ride, and I don't have to figure out how to nurture Baby Boy's love and respect of animals. Pony's, pot belly pigs, calves, horses, sheep, and goat...they all captured Baby Boy's attention.

That's a horse? It looks like a grown up pony? Are you sure it isn't a pony? Next year, I think I'll be ready to ride one of these Daddy!

Boy, that sheep isn't the smartest animal in the barn...it's trying to eat the metal gate!

Aspiring Photographer: Dahlias

A few years ago, I grew Dahlias in my flower garden. They are one of my favorite types flowers, and there is a lot of variety. I didn't continue growing them, because in Colorado, you have to dig the bulbs up every year and store them for the winter.

This one is a Dahlia Hawaii. It was the focal point of the color theme of my garden. I picked up all the colors for the flowers from this flower.

This was my favorite: It was a Dahlia Fringed (semi-cactus) Star's Favourite.
